In Google Play Store start a new release and upload the app bundle. Add release notes. Follow the versioning practices. Meet the Play Store requirements for the builds. A limited rollout is advised especially with the Drivers application.

Apple

Apple App Store new releases are done from the Xcode. Make sure that you are signed in with correct account. Use automatic signing for the builds. Go to Product -> Archive. Once build is done then Distribute app -button becomes available and follow the steps to complete the process. The builds go first to TestFlight. To make a production release go to App Store Connect website and click on the plus button and select the build from there.
